The Kimrose Santoku knife is a beautiful knife that cuts very easily and precisely. It has a nice heft and slices through pretty much everything like, well, like a hot knife through butter.
The knife has a lovely raindrop Damascus pattern with an excellent Chinese steel at its core, which was what attracted me to this blade – many makers of kitchen knives either do not tell you what the steel is or make it difficult to find out, to your later dismay. Whether or not it’s actually made with a folded Damascus process I have no way of knowing but it cuts really well and feels nice in my hand. We have several “really sharp knives” and this is the one I really like.

This knife presents very well. It comes in a custom molded box and includes a black stained wood sheath for the knife.
The knife itself is very hefty to hold and I am pleased with the balance of it. I cannot tell if it is a full tang blade, but the handle blends seamlessly into the blade itself and is curved and feels pleasant in the hand.
The metal of the blade is very fancy and patterned as I believe most Damascus Steel is supposed to be. The blade itself is sharp right out of the box and cannot find any flaws such as a chips or burrs in the metal at all.

I’ve been thinking about replacing our Chicago Cutlery knives that we’ve had for about 30 years. My wife was a bit reluctant as she thought they still had some life left in them. I ordered this knife and it changed her point of view! It’s now her go to knife for pretty much anything. She likes to make her own granola and she uses it to chop the almonds. She hadn’t realized just how difficult it had gotten to do that with our old Chicago Cutlery.
